This year, two evenings in particular stand out—both held at the Ritz-Carlton Montréal. Each has its own personality, but they share a common thread: excellence.


Daniel Boulud Hosts Olivier Chaignon

Presented on February 19 and 20 by Air France, the Soirées Signatures de Haut Vol are shaping up to be one of the festival’s major gastronomic highlights. A table designed for those who closely follow haute cuisine and know how to recognize encounters that truly matter.

The setting sets the tone: Maison Boulud, at the Ritz-Carlton Montréal, in the Grand Salle. For this unique occasion, chef Daniel Boulud opens his kitchen to Olivier Chaignon, executive chef of L’Osier in Tokyo—one of the very few restaurants in Japan to hold three Michelin stars. Trained in France and based in Japan for over 20 years, Chaignon has developed a cuisine of extreme precision, shaped by Japanese rigor and an absolute respect for ingredients. At L’Osier, each dish is built with restraint, balance, and depth—an approach that naturally resonates with Boulud’s culinary universe.

Over the course of two evenings, the two chefs will present a seven-course tasting menu created specifically for Montréal en Lumière. A gastronomic proposal rooted in finesse and technical mastery. For the occasion, Romain Valicon, Executive Chef of the Ritz-Carlton Montréal, welcomes Davy Tissot, one of the most respected chefs of his generation. The gastronomic menu, served with wine pairings, promises an evening where every detail is carefully orchestrated, from service to plate.

Romain Valicon boasts an impressive list of distinctions: member of the Académie Culinaire de France, Maître Cuisinier de France, Toque Blanche Lyonnaise, and Vice-Gastronomic Counsellor of the Chaîne des Rôtisseurs. In Montréal, he embodies an elegant, precise cuisine firmly rooted in French tradition while remaining open to contemporary influences.

Alongside him, Davy Tissot stands out for an exceptional career. Named Meilleur Ouvrier de France in 2004 and winner of the prestigious Bocuse d’Or in 2021, he is now an ambassador for the Institut Lyfe and President of the International Executive Committee of the Bocuse d’Or.
