Dorsia had its soft opening on June 20 and officially opens this week. The new restaurant brings an offering of elegance, top-notch service, and a delicious menu to Old Montreal!

Dorsia is the latest project from WITH Hospitality, the experienced restaurant group behind establishments like Ryu, Ayla, Sushi Dept, and Livia.

Located in Old Montreal at the intersection of Notre-Dame Ouest and Sainte-Hélène, the space is stunning. Drawing inspiration from the vibrant elegance of the 1980s, the modern décor was created in collaboration with David Dayan, Jason Lamarre, and Ivy Studio. The 90-seat restaurant features wood paneling, travertine, marble, mirrors, and clean lines, along with impressive light fixtures, evoking influences from London and Paris.

People come to Dorsia for the décor, but also to enjoy one of the best meals in the city! Chef Miles Pundsack-Poe, originally from Ontario, trained in Michelin-starred restaurants around the world, including The Restaurant at Meadowood (Napa Valley, CA) and Ensue (Shenzhen, China), before choosing to settle in Montreal to build his life and open Dorsia.

Miles has created a menu here that draws on global influences but is rooted in contemporary North American cuisine. The flavors and textures are impressive, featuring reimagined classics like filet mignon and lobster with pepper sauce. “I love that Quebec has a great appreciation for food. Working with local farms is a pure pleasure. I have an appreciation for the history of each product, and I feel that the clientele is here for that,” the chef shares.

The Dorsia menu offers a variety of appetizers, delicious homemade pastas, shareable dishes, and desserts. We highly recommend the Caesar salad (which is now considered one of the best in the city!), the lobster cappelletti with sabayon, the filet mignon, the duck, and the shareable lobster. Prices range from $26 to $65, with shareable dishes priced between $88 and $100. And it’s really, truly excellent.

Dorsia features a selection of signature and classic cocktails ($16-$19) and a wine list that showcases some rare finds, ensuring that lovers of classic wines will be delighted ($58-$580).

The cherry on top, however, is the service. The servers wear uniforms that make the experience quite pleasant and add a much-appreciated touch of professionalism. The service is formal in its gestures but remains accessible.
