At the foot of the mountain in Mont-Tremblant village, the Fairmont hotel is home to one of the finest dining destinations in the Laurentians: Choux Gras, where the cuisine is perfect for celebrating special occasions—flavourful, comforting, and beautifully crafted.

Opened in July 2017, Choux Gras takes its name from the French expression faire ses choux gras, meaning to make the most of something—in this case, to turn your visit into a feast, both on the plate and through the convivial spirit that animates the restaurant. The menu offers relaxed bistronomy rooted in a reimagined Québécois cuisine, showcasing strong partnerships with local producers. Evolving with the seasons, the menu highlights the restaurant’s signature dishes to share, featuring refined plates of fish, meat, and seafood, fresh vegetable sides, and delicious desserts crafted by the pastry team.

Since May 2025, the restaurant has entered a new chapter with the arrival of Mathieu Cloutier as Executive Chef of Fairmont Tremblant. A graduate of the ITHQ with more than 20 years of experience, Mathieu has established himself as a leading figure on the Québec culinary scene. Known for his television appearances as a judge and culinary contributor, he helped democratize the art of good eating with generosity and accessibility. A key force behind Kitchen Galerie and Kitchen Galerie Poisson, then chef-owner of the renowned Bistro Chez Roger, Mathieu has made his mark with thoughtful, generous cooking. He honed his craft in prestigious kitchens abroad, from Mietta’s Queenscliff Hotel in Australia to the two-Michelin-starred Restaurant Gill in France.

From the moment he arrived, his meticulous approach, collaborative energy, and creativity stood out. Inspired by the seasons, by local producers, and by Québec’s rich terroir, he plans to evolve the Fairmont Tremblant menus with a personal signature where terroir, modernity, and precision naturally align with the spirit of Choux Gras.

On the wine side, sommelier Étienne Lachaîne curates a list of more than 225 references, offering a journey through the world’s wine regions. A team of mixologists also crafts a selection of about fifteen cocktails featuring housemade infusions, bitters, and syrups.

Choux Gras offers stunning views of the mountain and Mont-Tremblant’s pedestrian village. Designed by the Toronto agency DesignAgency, the spacious room blends modernity with the elegance of a contemporary brasserie.

The roughly 80-seat dining room features large royal-blue velvet banquettes that offer added intimacy. The warm atmosphere is enhanced by the soft light streaming through the expansive bay windows, filling the space and opening generously onto the surrounding landscape.

We love Choux Gras because it remains one of the best restaurants on Mont-Tremblant’s mountainside, offering a delightful evening in an inviting setting—one that raises the region’s gastronomy to new heights.
