Amid the chaos of the pandemic, while the restaurant world was facing deep uncertainty, Sébastien and Véronique seized an unexpected opportunity: a small space had become available in the heart of Old Terrebonne. Despite the less-than-ideal timing, they dove in, driven by a long-time dream—to open a place of their own. Nearly five years later, BRUT. stands as a vibrant testament to their passion, boldness… and resilience.

Behind the stove, Sébastien brings his experience from two beloved Montreal institutions: Le Chien Fumant and La Cabane à sucre Au Pied de Cochon. The influence of both is clear in his cooking. His food is generous and sincere, rooted in the seasons and delivered with authenticity. The open kitchen echoes the laid-back energy of Le Chien Fumant, while the hearty plates carry the celebratory soul of La Cabane.

Fittingly, it was in the kitchen of Le Chien Fumant that Sébastien and Véronique’s story began—he was behind the line, she was out on the floor. Since then, their bond has only deepened, both personally and professionally. Véronique brings her impressive front-of-house background—most notably from Bar Saint-Denis—to the BRUT. experience, anchoring the dining room with warmth and expertise.

A Creative, Generous Menu

One thing’s certain: at BRUT., you eat well—and you eat plenty. The tasting menu is a must. Designed for sharing, it’s creative, indulgent, and offers exceptional value. Each dish celebrates seasonal ingredients with a distinct and personal touch. The à la carte menu features about five starters and around seven mains, drawing flavors from a range of global cuisines for a varied and colorful dining experience. The technical skill is outstanding—perfect cooking, impeccable sauces, and smart use of every ingredient.

The standout? Without a doubt, the house-made stracciatella. This creamy heart of burrata is made in-house following Sébastien’s own recipe, and evolves with the seasons. In summer, it might come with citrus and castelfranco (a type of chicory); in winter, it sometimes takes on the form of a rich, melty tartiflette. Always served with their house-made bread—grilled, buttery, perfectly salted—it’s universally adored.

And there’s more: the cocktail menu is absolutely worth exploring. Inventive, well-balanced, and occasionally surprising, the drinks are the perfect pairing to the food. The most popular? Le Sureau: elderflower liqueur, cucumber-basil gin, and lemon juice—fresh, zesty, and just fruity enough.

A Festive Vibe

The vibe at BRUT. shifts as the night goes on. Early evening feels relaxed, with a soundtrack of 70s and 80s classics. Later on, the energy builds as Quebec hip-hop and rap take over, and the party quietly begins. For a lively, love-filled dinner, grab a seat at the bar in front of the kitchen—it’s a front-row view of the dynamic duo in action. BRUT. is also great with friends—a perfect spot to indulge in a laid-back, generous meal full of the chef’s latest inspirations. Hosting a celebration? The space can even be privatized for a warm, festive gathering.
