Opened in November 2023 in the Sillery neighborhood of Quebec City, Tonino Pizza Gastronomica is the pizzeria of chef Anthony Travaglini, also known for his excellent restaurant, Tonino, located just a few blocks away.
Tonino Pizza reflects the same passion for Italian gastronomy that Anthony is known for, this time with a focus on the art of pizza. “I love pizza, and I wanted to create a pizza that really resonated with me here in Quebec City. There was a taste I was looking for, and now I can offer it,” says Anthony, who has always had a soft spot for this specialty.
The concept of Tonino Pizza is simple yet evolving: initially conceived as a pizzeria centered on takeout and artisanal products, the restaurant is gradually becoming a more complete experience, now offering a dining space and even a private lounge. With a total capacity of 40 seats, half of which are in the private lounge, Tonino Pizza has quickly become a must-visit for pizza lovers and a great spot for evenings with friends. “People can gather, and we’re slowly creating a true restaurant atmosphere,” adds Anthony.
An Authentic Italian Pizzaiolo
The pizzaiolo at Tonino Pizza is Luigi Coronella, a talented maestro from the Italian countryside. He prepares the dough, handles the wood-fired oven, and contributes to recipe development alongside Anthony. The menu changes occasionally, but some pizzas remain constants, like the Margherita, which Anthony refers to as the “mother pizza.” The Mortadella pizza, with pistachio pesto, fior di latte, mortadella, and basil, is definitely our favorite. Guests can also try more adventurous pizzas and other specialties inspired by Italian street food. “We have fun with the rustic side, like Italian street food, such as the croquettes. If you’re walking through Naples or Salerno, this is what you’ll find in the streets,” explains Anthony enthusiastically. Another house specialty is the generous pannuzini, a hybrid between a sandwich and a pizza. Everything we tasted at Tonino Pizza was flavorful, hearty, and prepared with high-quality ingredients.
For wines and cocktails, Candice Mbende designs the menus, offering classics while highlighting carefully selected private imports to pair with the pizzas. There is also a small grocery section with imported products.
What sets Tonino Pizza apart is that the pizza is absolutely delicious! It truly feels like you’re in Italy. With Tonino Pizza, Anthony aims to showcase the contrast between the refinement of Tonino, with its white tablecloths, and the casual, rustic vibe of Italian street food. “I’m proud of this expansion of the Tonino brand; it’s a beautiful blend of rustic and elegance!” he concludes.
Tonino Pizza has already established itself as one of the best pizzerias in Quebec City, offering both authentic cuisine and a warm place where you can enjoy the best pizza in town.
