“I discovered the food at this restaurant out of curiosity — Les Botanistes is part of the impeccable culinary empire of Chef Jean-Luc Boulay. And once I sat down, I immediately knew there was someone very talented in the kitchen; it was my first encounter with Chef Emeline Perot. Her hometown of Arcachon has given Québec a wonderful gift, and I enjoy every visit immensely.”

“Stéphane Modat’s restaurant offers a unique culinary experience — both modern and deeply rooted in Nordic traditions. In an intimate, elegant setting filled with playful touches, this southern-born chef showcases refined cuisine built around local ingredients, often sourced from hunting, fishing, and foraging. When you enter Le Clan, you walk right through the kitchen and can admire the chef and his brigade at work.”
