Chef Paul Toussaint (Kamúy), known for his creativity and his dedication to showcasing his Haitian roots, has launched his brand-new restaurant, 3 Pierres 1 Feu. This unique project celebrates barbecue with Caribbean and Texan influences, all set in a festive and welcoming atmosphere at the heart of Jean-Talon Market.

After opening America’s BBQ at Time Out Market, Paul felt the need to bring this vision to life in a physical restaurant. This space allows him to offer a full barbecue experience, drawing inspiration from the Caribbean, Quebec, and Texas.

3 wòch dife

The name 3 Pierres 1 Feu, meaning “3 wòch dife” in Creole, refers to a traditional open-air cooking method. The restaurant blends Paul’s Haitian heritage with fresh, local products from Jean-Talon Market. Meat takes center stage, prepared with both tradition and a gourmet touch. Cuts are sold by weight, like in a butcher shop, and paired with condiments such as pickled onions and pikliz.

“It’s an open kitchen—nothing is hidden. We want transparency and the best products possible,” says Paul. Don’t miss the ribs or grilled picanha, a seafood-lover’s delight. Honestly, everything is delicious.

Paul designed the restaurant’s decor to reflect his childhood and roots. Jacmel-inspired touches and Lebanese influences tell a rich story, celebrating Haitian culture. The warm, colorful setting fosters community, with art and heritage at its heart. It also nods to Hôtel Florita in Jacmel, where Paul enjoyed his first Rum Sour.

The cocktail menu complements the food, offering natural wines and classic selections—all at accessible prices.

Paul Toussaint and his team aim to make 3 Pierres 1 Feu an inclusive space, bringing together locals, tourists, and the Haitian community over great food and a festive atmosphere. The restaurant, open seven days a week, will also feature seasonal specials, ensuring fresh, high-quality offerings year-round.

“It’s a restaurant for everyone—the only requirement is being ready to celebrate,” Paul emphasizes.

With a solid lineup of talent, including Damien Brockway (Pitmaster), Robertho Daphinis (Executive Chef), Ana Castillo, and André Sterling (Consulting Chefs), 3 Pierres 1 Feu is poised to become a new culinary landmark in Montreal. Here, great food and lively gatherings create an authentic and unforgettable experience.
