Leméac’s famous omelette

Among the many indulgences to enjoy, the restaurant has added to its menu something that seems quite ordinary on paper, but is anything but once you’ve tasted it — whether plain, with sautéed mushrooms, bacon lardons and more. Leméac’s omelette has its followers, and the restaurant serves several thousand of them each year, bringing joy to just as many diners.
Here is the recipe, wishing you all the happiness possible — especially if you enjoy it with a little green salad on the side.
Ingredients

3 large free-range eggs

A knob of butter
-
1 teaspoon of mixed fresh herbs (*)
Filling of your choice, in the desired quantity:

Finely chopped mushrooms

Bacon lardons

Homemade Basque-style piperade
Equipment

A high-quality non-stick frying pan

A silicone spatula
Preparation

Whisk the eggs well in a large bowl.

Heat the frying pan.

Melt the butter until it just begins to foam.

Pour in the eggs and stir well with the spatula. Add the fresh herb mix of your choice.

The eggs should not stick — they must cook evenly while retaining a slightly soft, runny texture on top.

As soon as the mixture begins to set, remove from heat and let rest for one minute, then add your desired filling.

Fold the omelette in half and slide onto a plate.
