A casse-croûte-type joint will take shape at the Charles-Simard heritage house on the site of the Charlevoix Dairy.
A quintet of entrepreneurs is joining forces and launching a summer snack bar-type culinary offer in the fields behind the Charlevoix Dairy. Stéphane Racine (Le Ciel, Les Mordus) will be in charge of the kitchen operations. Sylvain Dervieux and Emile Tremblay (Faux Bergers and La Louve-Buvette) as well as Philippe and Jean-Daniel Labbé (Laiterie de Charlevoix and Aux Terroirs) will act as mentors and logistical and administrative support for their protégé, to whom they will leave the reins of the project.
A simple but well-thought-out offering
Stéphane will offer classic snack dishes – showcasing Charlevoix products, of course – with his own personal touch: chaga poutine, fried chicken from Viandes Biologique de Charlevoix, Hercule veal hamburger, kimchi hot dog, and more. Expect a few spontaneous surprises to be added to the mix as well.
Magali Payette (Bar Darling) will be in charge of customer service and the selection of beers, ciders, and wines offered (as of mid-June).
Customers will be able to picnic with their order in the field in front of the snack bar or enjoy it at home.
Open Thursday to Monday as of noon.
