The name doesn’t lie: at Fluffy’s, a donut has to be soft. Opened December 12, 2025, on Wellington Street in Verdun, this café — built by five friends — runs on one clear conviction: everything here is plant-based, from the house-made donuts to the specialty coffee, and no one misses the cow’s milk.

Born Behind Someone Else’s Espresso Machine

It all starts with a friendship struck up over a counter. Adrien, the driving force, was dreaming of a dairy-free bakery when he crossed paths with Eduardo Diaz behind another café’s machine; the two got talking beans, terroirs and roasting the way others talk about wine. “It took about three years before it became reality,” Eduardo recalls. Three more partners came aboard along the way. The name came from the donuts themselves: “super fresh, super fluffy.”

Donuts That Make the Case for Plant-Based

Going plant-based is the whole point at Fluffy’s. Several team members are vegetarian; Eduardo, who is lactose intolerant, cut cow’s milk out of his life long ago and rejects the idea that you need a drop of cream to eat well. His donuts plead the case: fried, yes, but built from A to Z — organic purées and sugars included — with no industrial shortcuts, no crumbled Oreo, no cookie dough. Free of animal protein, they stay light; you can devour a big one without leaving the table weighed down.

A Third-Wave Cup With Six Milks

The cup gets the same care. Three espressos wait on the board, each announced with its country of origin and tasting notes — pure third-wave reflex, the world Eduardo and his partners have lived in for years. Six milks round out the menu: coconut, macadamia, almond, soy, oat and a pea milk. Syrups are made in-house, from orange to a spiced winter pear, and it was a regular who slipped them the idea for the matcha yuzu tonic, a house favourite ever since.

Spa by Morning, DJ Sets by Night

Fluffy’s runs at two speeds. In the morning it’s “super relaxing,” almost spa-like; come evening, as the room fills up, the volume climbs a notch, DJ sets and all — just enough to make you sway in your chair. Wellington already has its share of great addresses, and Fluffy’s slots right in. You come to try the vegan latte; you leave in love with the donuts.
