In the spring of 2024, Claire Jacques opened its doors on Saint-Denis Street, right in the heart of the Villeray neighbourhood.

Philippe Guilbault and Laurence Théberge, the lovely couple behind the restaurant, had long dreamed of opening their own place. “At first, this project was supposed to be our retirement plan… in 30 years!” Philippe confided during our chat. However, the evolution of the project was much faster than expected, and everything fell into place for them.

While Philippe isn’t fond of the word, Claire Jacques truly embodies the essence of a “buvette” in every way. It’s a place to stop by for a quick drink or a bottle, to snack or enjoy a full meal—whatever you prefer, it’s all welcomed with open arms.

The name of the establishment pays tribute to Laurence’s grandparents, who had an unparalleled sense of hospitality. This legacy is reflected in the decor: vintage plates on the walls, a cozy armchair by the window, and a well-stocked bookshelf. Every detail evokes a sense of warmth and familiarity, making guests feel right at home.

At Claire Jacques, the atmosphere is as inviting as the food and drink, creating a space that feels like a charming visit to a loved one’s home.

Who Are They?

After many years in the restaurant industry, working at renowned institutions like Pastaga (closed today) and more recently Mastard, Philippe was eager to create a space where his own style of service could take center stage. Operating alone in the dining room during service, guests truly feel like they’re being welcomed into a home. “Jacques was like that—an incredible host. He made sure everyone had what they needed, and when all the glasses and plates were full, he would step back and enjoy watching his family have a good time.” The wine list at Claire Jacques features natural wines, or at the very least, organic ones, all at very reasonable prices. The cocktail menu is also worth mentioning, offering a variety of options that will appeal to all tastes.

In the kitchen, it’s Laurence, his partner, who runs the show. A self-taught chef, she is, however, a formidable pastry chef. Having worked for a long time with the renowned Patrice Demers at his pâtisserie, Laurence honed her techniques but, more importantly, learned the process behind creating a dish. The balance of flavours is a central element in her cooking, whether in her desserts or in her savoury small plates.

What do they love most about running Claire Jacques? Philippe answered, “Working together.” Laurence quickly followed with, “I was going to say Philippe…” before bursting into laughter. “Yuck! I really don’t want to sound like that couple, but it’s true—it’s what makes this experience so enjoyable!”

Can You Eat Too?

It’s hard to resist ordering a few small plates when you sit down at Claire Jacques. The menu is divided into two simple sections: savoury and sweet. The dishes change with the seasons, depending on the availability of ingredients, which makes the menu particularly dynamic. Since they’re just starting out, they make it a point to work with young entrepreneurs, from vegetable producers to the ceramist who created the serving bowls. This spirit of collaboration and community is palpable when speaking to the two owners.

Among the timeless dishes that remain on the menu in one form or another, we find whipped homemade ricotta, served during our visit with dried Espelette pepper from Philippe’s father’s garden, mini peppers, and pepper-infused oil. The chicken liver mousse is also a classic, this time paired with cubes of brandy-soaked apple and blackcurrant jell-o, marinated blackcurrants, and homemade brioche bread. We also got to try roasted Brussels sprouts, served with romesco sauce, pickled shallots, and Fruitière des Bergers cheese. For dessert, we enjoyed a caramel flan served on a sweet dough with chocolate and rum sauce.

What we love about Claire Jacques is that you can return often without getting bored of the menu, and because you really feel at home there. It’s a very welcome addition to the neighbourhood, and it seems to have already been embraced by the locals. If you’re in the area, stop by and say hello!
