Behind the project is a passionate team. Étienne Sabourin, director of the Shops Angus location and co-owner, built his career in distribution at Aux Terroirs and in retail at Les Grondines in Quebec City. Étienne Biotteau, a graduate in dairy processing from France, is also a co-owner of both locations. Pierre Biotteau oversees the accounting and financial structure of the venture.
In the kitchen, you’ll find chef and co-owner Louis Forest-Nault, who trained in several notable Montreal establishments (Brasserie T!, Montréal Plaza, Chaud Devant!) before spending two years at Auberge d’Aillane, a restaurant near Aix-en-Provence, where he mastered the art of French cuisine.
On the menu at Bleu & Persillé: customizable boards, seasonal dishes that evolve throughout the year, and soon, options that go beyond cheese and charcuterie — a place you can return to several times a month without breaking the bank. The French onion soup is a must, but the beef bourguignon truly won us over!
In the dining room, sommelier Romy Rondeau-Lépine (Quartier Général, Buvette chez Simone, Pearl Morissette) adds her signature touch to the project. The wine list features carefully curated private imports, mostly biodynamic or natural, selected by Romy — all at accessible prices (between $50 and $65 per bottle). There’s also wine by the carafe, to encourage locals to drop in for an apéro. The space is warm and welcoming, rooted in the neighborhood, with a terrace on the way and a laid-back, food-focused atmosphere. The team also plans to host pop-ups, tastings, and a variety of recurring events.
