Inspired by the vibrant tapas culture of Barcelona, ​​the restaurant offers a fine dining experience disguised as a lively neighborhood bar, bringing together the warmth of Spanish hospitality with the precision of high-end gastronomy.

The Story and People Behind Bar Isabel

Bar Isabel was the brainchild of Grant van Gameren, who, after leaving The Black Hoof, sought a fresh culinary direction. Spanish cuisine had yet to make its mark in Toronto, but after an inspiring trip to Spain—particularly Barcelona—Grant saw an opportunity. At the time, Spain’s food scene was gaining global attention, blending tradition with innovation. Bar Isabel was born from this momentum, channeling the energy of Barcelona’s iconic Bar Marsella, known for its old-world charm, rough edges, and deep-rooted Catalan character.

Alongside Grant, Alessandro Pietropaolo has been at the helm as Maitre d’hôtel and General Manager since 2015, while George Fellows, a sommelier and beverage director, has shaped the restaurant’s wine and cocktail program for nearly a decade. The team’s dedication to hospitality and consistency is what makes Bar Isabel a lasting success.

The Concept and Atmosphere

Bar Isabel is not just a restaurant; it’s an experience—a mixture of fine dining and a boisterous Spanish tavern. From the outside, its entrance is almost secretive, understated, and easy to miss. But step inside, and you’re immediately transported: the dim lighting, mosaic-tiled floors, deep wood tones, and curved archways echo the old bars of Spain. The space is intimate and energetic, with 60 seats, often filled with a lively mix of locals and industry veterans soaking in the warm glow of candlelight.

The name “Isabel” was chosen by Grant—something that felt both feminine and masculine, capturing the restaurant’s duality: refined yet raw, elegant yet approachable.

The Food: Classic Spanish Flavors with a Toronto Twist

At the helm of the kitchen is Chef Megan Gnurlandino, supported by Sous Chef Alex Knight. The menu is a love letter to Spanish cuisine, with an emphasis on bold flavors, high-quality ingredients, and simple yet precise execution. Some of Bar Isabel’s most celebrated dishes include the Grilled Octopus – The restaurant’s signature dish, cooked to perfection, smoky, and tender, Sobrasada & Foie Gras – A luxurious combination of creamy, spiced, and umami-packed flavors, Bone Marrow – A decadent, melt-in-your-mouth experience, Pinchos and Tapas – Small, shareable plates inspired by traditional Spanish bar snacks, Vegetables Done Right – Often overlooked in Spanish cuisine, but here, they shine with innovative preparations and Gâteau Basque – A rich and buttery Basque-style dessert.

The menu changes frequently, staying true to the seasonality and spontaneity of Spanish tapas culture while keeping beloved staples in rotation.

The Drinks: An Ode to Spain

The wine program, curated by George Fellows, is a carefully selected mix of Spanish wines, Old World classics, and a nod to Canadian winemaking. The list leans heavily on Iberian varietals, with a deep appreciation for terroir-driven, minimal-intervention wines. Expect to find iconic selections like Château Musar, alongside less-known but equally compelling Spanish bottles.

The cocktail menu, developed by Steve Navratil and George, embraces classic Spanish drinking culture. Signature drinks include Gin & Tonics or Rebujito, a traditional Andalusian cocktail made with sherry and soda, light and perfect for pairing with tapas.
