Spaghetti with anchovies from Moccione

If you can’t get a table there on February 14 (they’re fully booked), we’re sharing here a recipe for Moccione’s Anchovy Spaghetti!
“It was Davide, our friend from Belluno in the Veneto region, who first put this dish on the menu. It’s a refined and flavourful pasta, with the rich taste of anchovies and caramelized onions. Thanks to the slow cooking of the sauce, the flavours develop gently. It’s very popular—even among people who don’t usually like anchovies. Try it once, and you’ll be hooked.”
Ingredients for Moccione’s Anchovy Spaghetti
Sauce
- 3 tbsp (40 g) unsalted butter
- 2 tbsp (30 ml) olive oil
- 12 anchovy fillets
- 1 Spanish onion, thinly sliced
- 1 cup (250 ml) white wine
Spaghetti
- 18 oz (500 g) spaghetti
- 3 tbsp unsalted butter
- 4 tbsp (10 g) chopped flat-leaf parsley
Pangrattato
- ¼ cup (60 ml) olive oil
- 1 cup (45 g) fresh breadcrumbs
To finish
- 2 tbsp (30 ml) olive oil
- Pangrattato
- Zest of 1 lemon, finely grated with a microplane
Preparation — Moccione’s Anchovy Spaghetti
Sauce
In a saucepan over medium heat, melt the butter with the olive oil and anchovies. Reduce to low heat, add the onion, and cook for 10 minutes. Deglaze with white wine and continue cooking for 30 minutes, stirring occasionally to prevent sticking. Set aside.
Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente. Reserve 2 cups (500 ml) of the cooking water. Drain the pasta and transfer it to the sauce. Cook for 1 to 2 minutes longer. Off the heat, add the butter and chopped parsley. Stir vigorously to create a smooth emulsion. Add some reserved pasta water if needed.
Assembly
Divide the spaghetti among four plates. Drizzle with a bit of olive oil, sprinkle with pangrattato and lemon zest.
