Pinôt Boutique Hôtel: A True Love Story

Located in the heart of the village of Sutton, Pinôt offers a refreshing getaway experience, blending the intimacy of a guesthouse with the understated luxury of a high-end hotel. Since opening in October 2024, Pinôt has charmed visitors with its unique concept, brought to life by the couple behind the project: Florence Pelland-Goyer and Véronique Lacoursière.

A shared and complementary vision

Before embarking on the Pinôt adventure, Florence and Véronique followed different but complementary paths. Véronique, who worked in advertising before opening the former Café Bolt in Knowlton (now Caron & Frères), quickly found her strength in crafting a distinctive guest experience. Florence, with her background in restaurants (Montréal Plaza, Buvette Chez Simone, Bar à Flot) and hospitality, brought her deep love of hosting and personalized service.

Their project took shape during a trip to Portugal, where they discovered the world of boutique hotels. “Over there, the person running the hotel seemed to have the best life in the world,” Florence recalls. That moment proved decisive for the couple, who set out to create their own version of the concept in Sutton, right in the heart of the village.

Pinôt: a blend of luxury and authenticity

What sets Pinôt apart is its idyllic setting: a peaceful haven surrounded by nature, yet just steps from the village center. It’s a place to slow down and savor the moment while discovering the charm of Sutton. The common areas are spacious, allowing for both social interaction and quiet privacy.

Florence and Véronique’s philosophy is simple: to offer an experience that balances freedom and intimacy, without ever compromising on quality.

In the morning, guests enjoy a delicious breakfast included with their stay, and in the afternoon, a convivial apéro around the fire. The couple also hosts special events featuring guest chefs, including their recurring “Cin Cin” evenings, notably in collaboration with restaurants Casavant and Parapluie.

“We’re proud to offer an experience where connections aren’t forced—they happen naturally,” explains Véronique. Respect for the peaceful atmosphere remains at the core of their mission, while still creating a setting that encourages genuine exchanges, where each guest can experience their stay at their own pace.

An authentic project

What makes Pinôt even more endearing is the way the couple has built the project—without relying on major booking platforms. “We’re proud to attract a loyal clientele seeking authenticity and supporting local entrepreneurship,” says Véronique. Pinôt has quickly found its audience, drawing guests aged 25 to 70 in search of a hidden gem.

Florence and Véronique complement each other perfectly: Florence oversees hospitality, service, and the guest experience, while Véronique handles branding and administrative aspects. “When Florence is at the hotel, I have complete trust—and vice versa,” Véronique adds.

The future of Pinôt: a model to follow

With such success in just a few months, Pinôt is well on its way to becoming a benchmark for hospitality in Quebec. A project that truly reflects its creators, it offers far more than a simple stay—it’s an immersion into the beauty and authenticity of the region, where every detail has been thoughtfully designed to create a unique experience.

Far from large, impersonal resorts, Pinôt stands out for its human approach: a delicate balance of comfort and warmth, where guests feel at home while being cared for with exceptional service.
