After a decade of closure, Les Vieilles Portes, the iconic Saint-Sauveur establishment, has made a grand comeback with a stunning project led by A5 Hospitality. Kevin Latrem and Samuel Paradis-Tremblay have breathed new life into this emblematic venue, offering a festive and welcoming ambiance where guests can enjoy modern, refined cuisine. With its charm and vibrant atmosphere, Les Vieilles Portes is quickly becoming a new gem in the region, already turning heads.
The restaurant is in excellent hands with Kevin Latrem (Name’s on the way, Babacool Laval), well-known in the industry for his successful ventures. After spending seven years in Bali, he returned to Quebec to realize a long-held dream: opening a restaurant in his hometown. Joining him is Samuel Paradis-Tremblay (Boating Club, Esterel, Bar à vin Deux), a young self-taught chef who heads the kitchen, offering French-inspired cuisine that he describes as “fun dining,” highlighting local ingredients. We were particularly impressed by the duck tartare with grilled hazelnuts, mushroom duxelles, and blue cheese, while the rabbit mustard croquettes served as snacks were equally delightful. For the main course, don’t miss the reimagined beef Rossini with a hash brown-style potato galette—an absolute treat!
The wine list, curated by sommelier Raphaël Gosselin, showcases private imports from small producers. You’ll find classic, straight wines alongside funkier options. As for cocktails, expect revisited classics featuring seasonal ingredients.
Warm Ambiance & Elegant Design
Designer Amlyne Philipps of La Chambre Design & Co brought modern flair to the century-old house while preserving its charm and history. Inspired by the chalets of the French Alps, the ambiance is both chic and cozy, featuring wood, stone, and vintage elements discovered on-site. A beautiful gas fireplace anchors the dining room, which seats nearly 100 guests, while the second floor will soon feature a lounge area and private room for group events. To top it off, the restaurant boasts a stunning front terrace.

Kevin Latrem enthusiastically states, “The goal is to give people different reasons to come. We’re lucky to host a diverse clientele here for all kinds of occasions.” Les Vieilles Portes opens its doors for everything from a quiet weekday dinner to a lively evening that stretches into the night. On Fridays and Saturdays, the restaurant stays open until 2 a.m. with a DJ. Keep an eye out for the official grand opening, which promises to be a colorful event to kick off the ski season. Coming soon: a discounted Sunday table d’hôte, along with brunches and lunches starting this winter.
