Saucette Caviste, a recently opened neighborhood wine bar in Saint-Lambert, is the result of a collaboration between Marie-Ève Collin and Catherine Denault, two longtime friends united by a common vision. They bring excellent natural wines and wonderful moments of conviviality to Saint-Lambert.

Marie-Ève and Catherine have known each other for over 15 years. Two years ago, they reconnected and discovered that they shared a similar project: to open a friendly place centered around wine and good food. For Marie-Ève, it was a retirement dream, while Catherine had been thinking about it for a good decade. Their backgrounds are different but complementary: Marie-Ève, a graduate in culinary arts from ITHQ in 2002, has always worked in the restaurant industry and more recently took a sommelier course. Catherine, on the other hand, comes from a background in management and marketing, with a growing passion for wine gained through training and numerous travels.

An Evolving Concept

Initially, the two partners aimed for a small wine shop with a few seating options. However, upon finding the location in Saint-Lambert, they realized that a wine bar aspect was missing in the neighborhood. Thus, the concept of Saucette evolved into a space where people can come to enjoy wine and gourmet dishes in a relaxed, home-like atmosphere. “We want people to feel at home, as if they’re receiving friends or family,” emphasizes Marie-Ève.

The wine shop section offers over a hundred products (natural, organic, additive-free wines made by small local and international producers), with inventory changing weekly to feature new arrivals. This dynamic allows for the organization of wine-related events, such as tasting workshops and meetings with winemakers. “We want to highlight the artisans who work passionately to bring us these wonderful products,” notes Catherine. The wine bar serves as an entry point where customers can discover wines they can later purchase to take home, all while receiving personalized advice.

A Menu Focused on Sharing and Seasonality

The menu at Saucette has expanded beyond expectations, featuring dishes that invite sharing. Some classics, like charcuterie and cheese boards, will remain on the menu, but it will change with the seasons to incorporate local products. “We collaborate with local producers like Les Fleurettes for our vegetables and the Fuoco cheese factory,” explains Marie-Ève. Among the standout dishes are roasted vegetables served with homemade labneh and spicy oil, as well as kimchi fritters with green onion emulsion. You can also expect to find smoked salmon from Fumoir de La Loutre, prepared according to Marie-Ève’s inspirations and seasonal products. Marie-Ève creates delicious and appetizing dishes that make you want to come back. “People are amazed to see such quality in the dishes,” notes Catherine.

The decor of the wine bar, a result of collaboration with Séjour Studio, is both warm and vibrant, featuring touches of lilac, white, and light wood. They designed a space reminiscent of a kitchen island, the perfect spot to gather with a glass in hand. The atmosphere remains relaxed and unpretentious, ideal for a quick visit, a happy hour with friends, or a leisurely dinner. Each visitor is welcomed and advised like a friend. It’s a place to enjoy a glass of wine and a bite to eat, leaving with a smile and a good bottle under your arm.
