Pub Prince: a refined and gourmet tavern

Montreal has a new neighbourhood pub—and it fully owns it. Pub Prince, which opened its doors in March 2026, leans into a simple but sincere formula: well-executed comfort food, accessible prices, and a warm atmosphere that makes you want to come back. Often (especially for the mozzarella sticks!).

Behind the project is a strong team of partners: Renaud Lambert, Peter Mant, Victor Collette, Philippe Allard, Kasra Ghaffari, and Jasper Shaza, with chef Pierre Morneau at the helm. This isn’t his first kitchen venture: he helped open Limousine, spent time at Miracolo, and was chef at Jjacques in Quebec City. A varied background that shows in Pub Prince’s menu—eclectic, unpretentious, and indulgent.

Pub Prince… “a high-end Applebee’s!”

The concept is summed up perfectly in a phrase the team uses themselves, with a mischievous smile: “a high-end Applebee’s.” In other words: comforting classics—burgers, pizzas, mozzarella sticks, fried olives, popcorn—prepared with attention to detail that elevates every bite without ever feeling pretentious. “People are tired of $200 tasting menus,” explains Renaud. “At the end of the day, they love a good burger, they love cheese sticks.” Pierre adds, with a vivid image: “It’s the kind of menu your dad would take you out for when your mom wasn’t home on a Monday night.” Honestly, we couldn’t put it better. The place evokes nostalgia, childhood memories, and pure comfort—with a festive, well-lubricated twist.

At the heart of the space is a beautiful bar, along with a pool table that completes the scene and reinforces the laid-back, proper pub vibe. Pub Prince is designed as a versatile spot: come by early for a quick beer, settle in for dinner over a good bottle of wine, or stay late into the night. The playlist moves from reggae to hip-hop to rock and country, while screens show sports games—or retro movies when there’s no match on.

On the drinks side, Pub Prince has a few surprises in store. Sommelier and co-owner Victor Collette is working on a secret list of carefully selected wine bottles, offering the chance to drink something more refined in a relaxed setting. The cocktail program, meanwhile, is crafted by Jonathan Homier—and is just as impressive.
