Just weeks after opening its new location in Pointe-Saint-Charles, Louise Boulangerie has already won over the neighbourhood, whose residents are clearly delighted to see a new artisanal bakery set up shop in the area.
“The response has been incredible—people are thanking us for opening here,” say the owners, Jean-Charles Stattner and Yoann Dhion, amazed by the outpoor of love. It’s a mutual love story for the two partners, who have also fallen in love with the neighbourhood. Louise Boulangerie has taken up residence in the former caisse populaire at the corner of Centre and Island streets. While the modern, minimalist decor—designed by Dot. architecture—recalls that of the first location on Saint-Laurent, the new spot features a large dining room with 26 seats (including a big table with power outlets for coworking enthusiasts!) and a production space for pastries and baked goods in the basement. The massive vault that once stood in the middle of the premises has now been converted into an office and storage room.
Bread for All
The co-owners were mindful about integrating well into their new neighbourhood. “I didn’t want to seem like some fancy bakery just for rich folks,” explains Yoann Dhion. “Bread is the first thing you put on the table. It has to remain affordable. We try to keep that artisanal touch, but still make it accessible to everyone.”
If you buy three croissants at Louise Boulangerie, you get the fourth one free—the same goes for baguettes. Among the house specialties, Yoann also recommends the excellent cannelés (Jean-Charles, a trained pastry chef, created the recipe) and the famous ‘Pain Suisse’: puff pastry filled with crème pâtissière and chocolate chips, which you can try in a hazelnut-praline version on weekends. Cakes and pastries are also worth a look. The lemon meringue tart in particular was calling to us from its display case.
Since there’s space to eat on the premises, Louise bakery’s offerings have been expanded to include lunch and brunch items, with a selection of sandwiches, focaccias, quiches, and savory pastries. A breakfast combo—with your choice of viennoiserie and a coffee—is also on the way.
