Nestled on the vibrant Wellington Street in Verdun, Brook is a true haven for lovers of New York-style pizza. The spirit of this pizza, authentic and generous, is infused into every creation at this casual establishment, where friendliness and quality are always on the menu.
At the helm of Brook is a passionate artisan, Toby Bouchard, originally a master beer brewer, who decided to focus on his passion for pizza. After working in a Pizzeria No.900 food truck and then opening the Knowlton Co. microbrewery in Lac-Brome, he finally decided to bring a touch of the Big Apple to his neighborhood’s culinary scene. The lack of lunch options and authentic pizzerias in Verdun inspired him to create Brook, where he can express his overflowing creativity and love for New York-style pizza.
As you step into Brook, you are greeted by the enticing smell of freshly prepared dough made on-site. The menu offers a variety of pizzas, all cooked in the traditional New York style. A particularity is the blend of cheeses used, including cheddar and provolone in addition to mozzarella, giving each bite a unique character. Among the menu highlights is the cacio e pepe, an often underestimated but incredibly delicious option. It’s actually Toby’s favorite. For fans of thick crusts, the pan pizzas are also worth trying for something a little different. The dough is thicker and the cheese crisps on the edges. It’s absolutely decadent! But the magic of Brook doesn’t stop there. “We put a lot of emphasis on quality, everything is artisanal without cutting corners with the best available products,” says Toby. In addition to pizzas, the restaurant also offers cookies inspired by the famous Levain bakery in New York, as well as hard ice cream with which they make affogato. To accompany your slice, you can choose from a very nice selection of privately imported wines, carefully selected to complement every bite.
Brook’s ever-evolving decor reflects the dynamic and laid-back atmosphere of the Brooklyn neighborhood as well as the underground punk rock scene through beautiful wall illustrations.
