Tucked away in Saint-Sauveur, Loiseau d’à Côté embodies the passion and expertise of Alexandre Loiseau, a well-known figure in Quebec’s culinary scene, and his partner, sommelier Sandra Côté. After years spent working in some of Montreal’s top kitchens, Alexandre and Sandra chose to settle in the region. Loiseau d’à Côté offers an authentic cuisine, rooted in the seasons and local products.
Alexandre Loiseau’s journey is rich and impressive. At just 15, he began cooking alongside Jean-Paul Giroux. A three-month internship with Bernard Loiseau in Saulieu in the region of Burgundy would leave a lasting mark on his career. “It was a very intense and hierarchical experience, but I learned more than I ever imagined,” he recalls. Back in Quebec, he continued his training at La Chronique, then worked at Globe with David McMillan and Fred Morin. These experiences led him to become a chef for the first time at the restaurant La Bastide. But it was with Bistro Cocagne — a restaurant he ran for 11 years alongside Normand Laprise and Christine Lamarche of Toqué — that he truly made his mark.
In 2021, Alexandre and Sandra decided to leave the city and move to Sainte-Adèle. “I felt like I could express myself fully in Montreal, but the region has allowed me to really develop my cuisine in a more intimate environment,” says Alexandre.
A cuisine of ingredients, respectful of the seasons
Alexandre’s cooking is an ode to freshness and simplicity. Inspired by French and Italian classics, he reimagines them using Quebec’s local products. He focuses above all on the quality of ingredients, never masking their true nature. He works closely with local producers, such as the farm La Récolte de la Rouge, which provides incredible vegetables, and Max l’Artisan for regional specialties. “I even make the trip to Montreal to get asparagus from La Sublime Asperge at Jean-Talon Market,” he says. Respect for the seasons is reflected in a frequently renewed menu, with daily specials that keep guests coming back.
Alexandre doesn’t just use fresh ingredients; everything is made in-house. He doesn’t purchase anything pre-made — not the meats, not the fish (sourced from Richard St-Pierre), nor the sauces or pastas.
At Loiseau d’à Côté, the atmosphere is relaxed and welcoming. It feels like home — a perfect place for conversation, connection, and savoring a meal in an intimate setting. The laid-back ambiance comes with impeccable service.
Carefully curated
The wine list, curated by co-owner and sommelier Sandra Côté, perfectly matches the spirit of the cuisine. She offers a balanced selection of natural wines (not too funky) and notable appellations. The cocktail menu, also crafted by Sandra, features several house creations that have become staples of the restaurant. Beer lovers will also be pleased by a thoughtful selection of local craft brews.
Loiseau d’à Côté also stands out for its accessible pricing, especially at lunch. “It’s funny to say, but I never thought I’d leave Montreal and make a living from my craft outside the city. People appreciate what we do. I’ve stayed true to my cooking, and my clientele followed. It’s heartwarming to see them come back and be happy to see us again,” says Alexandre.
