Le Esmond is a charming restaurant in Granby that has completely won us over. If you’re in the area, don’t miss this must-visit spot for its market cuisine, shareable dishes, and superb wine list.

Le Esmond has been open for seven years now, but it features a completely different concept from its early days. Antoine Bossé, the chef at Le Esmond since its very beginnings and now the sole owner, has taken full control of the restaurant and shaped it entirely in his image. His partner, Kassandra Auclair, joined him and brought a touch of modernity and a fresh perspective to the establishment. Today, it is a place that encourages sharing and makes you want to linger at the table.

Creative and Evolving Cuisine

Antoine crafts a weekly menu filled with dishes that skillfully blend delicacy and indulgence. You’ll discover colorful and creative plates that are straightforward and bold in flavor. He is committed to using whole ingredients to minimize waste. “The menu is evolving and spontaneous, centered around sharing. I enjoy creating dishes that I really want to eat,” explains the chef. Notably, he serves beef cheek in a clam chowder: a delight! Some classic dishes, such as steak frites or his famous dish of fried perch topped with onion rings, will remain on the menu. Additionally, you can create your own seafood platters by choosing from the menu and the daily arrivals. Don’t hesitate to try Antoine’s pasta dishes; they are absolutely divine and always topped with rich, indulgent sauces. We are still raving about his snow crab ravioli!

The wine list is a blend of classic and more funky wines. There is truly something for everyone. Antoine collaborates with several wine import agencies to introduce hidden gems to his clientele.

A New Era

“I struggled with imposter syndrome for a long time. I was 25 when I started at Le Esmond,” Antoine recounts. “I don’t have the most glamorous story… In high school, I was a bit of a lost soul and decided to study cooking on a whim. It became a true passion. I invested a lot to perfect my knowledge. It hasn’t always been easy, but it has truly been worth it!” says the chef, full of ambitions for the future.

The spacious dining area, which seats 80, is located in a former textile factory, giving the place an industrial look. However, the brick wall, the predominance of wood, colorful dishes, flowers, and plants manage to create a warm and welcoming atmosphere. If you’re from the area, you’re probably already familiar with Le Esmond, but for others, this spot is definitely worth a visit in the region. In fact, the restaurant proudly features on our list of the best restaurants in Granby. We mention it because Antoine and Kassandra have truly succeeded in sharing their passion with us, and we believe it’s a must-visit in the Eastern Townships.
