The macaron is one of the most pleasant little treats to savour. These delicate almond-based confections owe their popularity to their colourful good looks and to the wide range of flavours you’ll find lining pâtisserie shelves. Red, blue, green, yellow or brown, a macaron is built from two light shells — crisp on the outside, tender and chewy within — made on the same principle as meringue. Between them sits a filling that shifts with the pastry chef’s mood: often a ganache, sometimes a caramel, a jam or a praliné. Classic as it is, the macaron leaves plenty of room for a pastry chef’s creativity, to the delight of anyone with a sweet tooth.

Though the macaron is a French pastry with a worldwide reputation — carried in large part by the house of Ladurée — the craft has spread across the planet, and you’ll find excellent macarons, along with a few local variations, in a great many countries. Canada is no exception. Montreal is home to excellent macarons made by pâtisseries and gourmet addresses all over the city. Some specialize in these delicate pastries; others are pâtisseries that turn out very good ones without making the macaron their sole focus. Montreal may not be Paris, but with the talent of the pastry chefs working here, there’s no need to cross the ocean to eat macarons worthy of the name.
